lib/logger: follow-up for 72f8fce107
- Document the change at docs/CHANELOG.md
- Log fatal errors if the -loggerJSONFields contains unexpected values
- Rename -loggerJsonFields to -loggerJSONFields for the sake of consistency naming commonly used in Go
